Pasta salad is very versatile. Just chuck any salad ingredients into a bowl with pasta, and you have a perfect lunch!
Pasta salad is also a great side at a BBQ (or a ‘Braai’ to us South Africans). It’s perfect for when you realise at the last minute that you don’t want to show up empty-handed!
How to make Mediterranean Pasta Salad

As I mentioned before, you can pretty much add anything to your pasta salads. This is my personal favourite pasta salad recipe.
There are five ingredients I always add to pasta salads. The rest of the ingredients don’t matter all that much to me, I just add whatever else I have in the fridge.
The five ingredients that make a banging pasta salad everytime are:
- Olives
- Sun-dried Tomatoes
- Red Onions
- Fresh herbs (Coriander or Parsley)
- Balsamic Vinegar
Not only do these ingredients work perfectly together, I always have them in my fridge. So I can literally make this pasta salad whenever I’m craving something light and delicious!

I like to use chickpea pasta so that the salad is more of a high-protein meal.
Some other additions that also work really well in this pasta salad:
- Artichokes
- Bell Peppers
- Cherry Tomatoes
- Kale
- Lemon Juice

Mediterranean Pasta Salad
Ingredients
- Pasta of your choice
- Kalamata Olives
- Sun-Dried Tomatoes
- Red Onion
- Fresh Herbs (coriander or parsley)
- Kale
- Any Additional Toppings (eg. bell peppers, tomatoes, cucumber, banana blossoms, artichokes…)
Dressing
- 1 tbsp Balsamic Vinegar
- 1 tbsp Oil From Sun-Dried Tomato Jar
- 1 Lemon (juice of)
- Fresh Herbs (coriander or parsley)
- 1/2 tsp Garlic Powder (or chopped fresh garlic)
- Salt and Pepper
Instructions
- Start off by cooking your pasta according to the package instructions.
- Whilst the pasta is cooking, prepare your add-ins. Chop all the vegetables into bite-sized pieces.
- Finely chop your herbs and add half of it to the rest of the dressing ingredients and mix well.
- Once the pasta is cooked, allow to cool down before adding your salad ingredients.
- Remove any hard ribs from your kale and massage the leaves with half of your dressing.
- Once the pasta has cooled down, toss in your toppings.
- Pour over the remaining dressing and top of with the rest of the fresh herbs!
